We want you to know that the suckling pig of Los Galayos is one of the best of Spain. This information has been published in the guide "The best of the Gastronomy" by the gastronomic periodist Don Rafael García Santos.
All the pigs are choosen from one farm next to Segovia, Pigs of four weeks and with a weight of five kilograms. This baby pigs only have drunk milk from their mother.
The way of cooking is slowly during many hours.
